About this Recipe

A great warm soup filled with delicious vegetables and comforting rice. Perfect for a cold day! (This makes a huge pot to feed the community! If you need to cut down on the recipe, cut down by half).

  • 4 slices of ginger
  • 1 lemongrass stalk
  • 1 cup vegan fish sauce
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 12 cups cooked jasmine rice
  • 1 cup mushrooms
  • Minced garlic
  • Vegetable oil to fry garlic
  • Water for broth

Condiment recommendations: 

  • Fried garlic
  • Chili peppers
  • Lime wedges
  • Cilantro or green onion
  • Sriracha
  • Chili oil

Step-by-Step Instructions

  1. Add ginger and lemongrass to a large pot with water filled about halfway.
  2. Bring the water to a boil and then add vegan fish sauce.
  3. Add chopped carrots and celery and bring back to a boil on high for 15 minutes.
  4. Add 12 cups of jasmine rice, stirring the pot occasionally to keep the rice from burning on the bottom. The starch from the rice will help thicken the broth.
  5. After 15 minutes, the broth will thicken. Continue to stir occasionally.
  6. Add the mushrooms.
  7. Make garlic oil by frying minced garlic with vegetable oil.
  8. Pour the garlic oil into the soup, and then the soup is ready! Add your favorite condiments too.
